Roast it! Preheat oven to 375°F. Wash
and peel 4 med sweet potatoes and cut into 1" pieces. Toss in large bowl
with 1 Tbsp olive oil, 1/4 c pure maple syrup, 1/4 tsp salt, 1/2 tsp
cinnamon, a pinch of nutmeg, and 1/4 c chopped pecans. Place mixture in
13" x 9" baking dish. Roast until fork-tender, about 40 minutes. Serves
4.
